1/2 teaspoon dried oregano
1 teaspoon dried parsley
1-2 tablespoons butter or enough to make 3 tablespoons of fat in the skillet salted or unsalted
3 tablespoons flour
3 cups chicken broth
2 medium Yukon Gold potatoes diced
1 cup whole milk warmed
2 cups shredded sharp cheddar cheese
salt and pepper to taste
