Butternut Squash Soup

There is perhaps no more comforting food than the rich, velvety bowl of heart-warming soup that I describe here.

It’s just the sweetest, most filling and notorious soup I think I can make. Perfect vegetables which are in season for winter!

Ingredients

1 medium butternut squash, peeled, seeded, and cubed
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1/2 teaspoon ground nutmeg
Salt and pepper to taste
1/2 cup heavy cream (optional)
Fresh parsley for garnish (optional)
