There is something very comforting about chicken noodle soup. It is a full nutritious dish and mine has hunks of hearty white meat, carrots and celery. I particularly love it when suffering with a winter cold!
I love to add some onions and garlic for bite and aroma, and I love the whole-grain goodness of egg noodles.
Ingredients
1 pound boneless, skinless chicken breasts
8 cups chicken broth
2 cups water
3 carrots, peeled and sliced
3 celery stalks, sliced
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper to taste
8 ounces egg noodles
2 tablespoons fresh parsley, chopped
