Instructions:
Fry bacon and in a pot over medium heat until crisp. Reserve drippings and remove bacon to a paper towel lined plate.
Add butter to reserved bacon drippings. Add the ham, onion, celery, carrot, and garlic and cook over medium heat until tender. Stir in flour and dry mustard. Cook for 1 minute.
Slowly add the beer a little bit at a time, whisking after each addition. Add the chicken broth a little bit at a time whisking after each addition.
Add potatoes and bring to a gentle boil until fork tender.
Microwave steam able broccoli.
Pour in cream. Add broccoli, Velveeta and Pepperjack cheese, simmer until soup is thick and creamy, and cheese is melted through. Season to taste with salt & pepper, paprika and any other seasonings of choice!
Stir in the crumbled bacon and enjoy!
