There’s nothing better than a rich and hearty soup that combines tender pieces of turkey and nutty wild rice. I love using ingredients like plump mushrooms, verdant herbs and tender chunks of turkey.
I always like to include carrots and celery for that extra bit of flavor and texture. It’s the ultimate snuggly night in.
Ingredients
1 pound cooked turkey, shredded or diced
1 cup wild rice, rinsed
1 onion, chopped
3 carrots, peeled and sliced
3 celery stalks, chopped
3 cloves garlic, minced
8 cups chicken or turkey broth
1 teaspoon dried thyme
1 teaspoon dried sage
1 teaspoon salt
1/2 teaspoon black pepper
1 cup mushrooms, sliced (optional)
1 cup heavy cream or half-and-half
1/4 cup fresh parsley, chopped (for garnish)
